Okay...here's a new thread for apple recipes... add yours here!
Here's my favorite fall applesauce cake recipe. This is relatively low-fat and tastes great any time of year, but especially in the fall, and especially with home-made applesauce!
Applesauce cake (oven 350F)
Whisk together in a medium bowl:
2 1/4 cups AP flour 1 teas. salt 1½ teas. baking soda 2 teas. baking powder 1½ teas. cinnamon ½ teas. nutmeg 1½ cups rolled oats
In a large mixing bowl, cream together about 3 minutes:
1/3 cup vegetable oil 1 3/4 cups pure maple syrup
Add and beat on high for about 5 minutes:
5 egg whites (or 3 whole eggs)
Thoroughly mix in:
1½ cups unsweetened applesauce
Gradually add flour mixture, beating well after each addition, and scraping bowl.
Grease and flour a 10-inch Bundt. Pour batter into pan and bake 45-55 minutes, or until it tests clean. Immediately invert pan onto a serving plate and remove pan.
This cake is heavenly served warm with warm applesauce and warm caramel on the side.

Ooh, that sounds like a good one!
Here is my favorite apple recipe. I got it from an Amish restaurant in Ohio. The crumb topping is more moist than crunchy and it is heaven!
Apple Crisp
4 cups apples, sliced 1 ¼ cup sugar 1 tsp. Cinnamon 2 T. flour
Topping: 1 ¼ cups flour 1 ¼ cups oatmeal ¾ cup brown sugar ¼ tsp. Baking soda ¼ tsp. Baking powder 1/3 cup butter (or margarine), melted
Combine first ingredients, place in 9” square pan. Combine topping ingredients, mix until crumbly. Place on top of apples. Bake at 350F (or 175C) for 30-35 minutes.

This is one of the first desserts I ever cooked with my Mom. It was hard to keep the fire going in the firepit, but now that we have electricity it is much easier.
We call it:
Apple Dessert
All measurements are subject to taste
8 medium apples 1/2 cup water 1 tsp cinnamon salt
1 cup sugar 3/4 cup flour 1/4 cup butter
Peel and slice the apples and put them in a baking dish. Pour water over them. Sprinkle with the cinnamon and salt.
Mix sugar, flour, and butter well. Crumble over the apples like a crust.
Bake 45 minutes to an hour. 350 degrees F. (175 degrees C.)
