I love sweet potatoes. I always start missing them in the summer. They've finally started turning up in our area again! My kids love them, too. Great recipes!

Baked Sweet Potato
3 cups ... cooked, mashed sweet potato ½ cup ... brown sugar 2 ... eggs 1/4 cup ... milk 1/4 cup melted butter
Topping ½ cup ... brown sugar 1/3 cup ... flour 1/4 cup ... melted butter 1 cup ... chopped pecans or walnuts
Combine sweet potato,sugar,eggs,milk & butter. Place in a buttered (2L) ovenproof casserole. Combine the topping ingredients. Mix well sprinkle on top of potato mixture. Bake, covered, at 180 c. for 1 hour or until throughly heated.
This dish may be prepared early in the day and heated just prior to serving.
Yeild 6-8 servings. ;D

Here's agreat and easy recipe for a sweet potato gratin, but with no cheese!!
Ingredients:
1 kg sweet potatoes (orange or white, or a mixture) 25 g unsalted butter 100 g onion, thinly sliced in rings or half-rings 5 dl creme fraîche 1 and 1/4 dl heavy cream 1 tsk. garam masala 1 krm nutmeg 1 garlic clove, minced salt and freshly ground black pepper
Preheat oven to 175 C.
Peel spuds and slice into about ½-cm slices. Grease a gratin pan with a little of the butter and dice the rest. Stir together all ingredients and pour into pan, even out. Bake in oven about an hour or until the potatoes ar soft and have a little color and crispy surface.

I just got my sweet potatoes yesterday ;D ... they are the big fat orange ones These other recipes for sweet potaoes sound great ... I must try them since their in season.

Sweet Potato and Black Bean Burrito
ca. 5 cups peeled cubed sweet potatoes (any variety)
½ teas. salt
2 teas. olive oil
ca. 3 cups chopped onions (I like white onions)
4 large garlic cloves, minced
1 Tbs. minced fresh green chile (jalapeño /serrano)
4 teas. ground cumin
4 teas. ground coriander
ca. 4½ cups cooked black beans (or pintos or whatever)
ca. 2/3 cup lightly packed cilantro leaves
2 Tbs. lemon juice
1 teas. salt
8 eight-inch flour tortillas
salsa (your choice)
Preheat oven to 350 F.
Place spuds in a medium saucepan with ½ teas. salt and water to cover. Cover and bring to a boil, then simmer until tender, about 10 minutes. drain and set aside.
While potatoes are cooking, warm oil in a skillet or pan and add onions, garlic and chile. Cover and cook on med-low heat, stirring occasionally, until onions are tender, about 7-8 minutes. Add cumin and coriander and cook for 2-3 minutes, stirring frequently. Remove from heat and set aside.
Combine beans, cilantro, lemon juice, 1 teas. salt and spuds in a food processor bowl and process until smooth (can also combine in a big bowl and smash with a potato smasher. Result is less smooth but nicely textured.). Transfer to large bowl and stir in cooked onion mixture.
Oil a large baking pan. Spoon about 2/3 to 3/4 cup filling in each tortilla, roll it up, and place seam-side down in baking dish. Cover tightly with foil and bake for about 30 minutes, until piping hot. Serve topped with salsa.
Fresh Tomato Salsa
ca. 3 cups diced tomatoes
1 small fresh green chile, minced, seeds removed for a milder 'hot'
1 Tbs. lime juice
1-2 Tbs. minced fresh cilantro
Combine all ingredients and serve at room temp.

SWEET SWEET POTATOES
2 lbs sweet poatoes, peeled and cubed (6-7 cups)
1 cup unsweetened apple, pear or orange juice
1/4 cup honey or maple syrup
1 teas. grated fresh ginger root
½ teas. ground cinnamon
1/4 teas. ground cardamom
½ teas. salt
Preheat oven to 350 F.
Carefully lower spuds into about 2 liters boiling water (enough to cover them) and simmer for about 5 minutes.
Meanwhile, stir together juice, honey or syrup, ginger, cinnamon, cardamom and salt in an oiled baking dish (2-liter). drain potaoes, add them to baking pan and stir well to coat with juice mixture. Bake, uncovered, for about an hour, stirring about every 15 minutes, until potatoes are tender and juice has thickened and coats the spuds.
