I call this my “Ohh my god, they just phoned and they’ll be here at 3pm and it’s 1:45 pm” Rhubarb Cake.
Actually this is a simple cake that can be done in an iron frying pan or a cake pan/ceramic.
200 g. rhubarb 100 g. butter 2-½ dl. Sugar 1 tsp. Vanilla sugar 3. Eggs 3 dl. flour 1 tsp. Backing powder
Set oven at 175 degrees. Melt butter … finely chop the rhubarb and add to melted butter. Removed saucepan and stir in sugar, vanilla and eggs until smooth. Add flour and baking powder and blend until smooth. Pour cake batter into greased pan. Bake for 30 mins.
Tips … If you’re using frozen Rhubarb, let it defrost and drain the excess liquid ( a real mess trust me) I’ve also used frozen berries ( no need to defrost them) with great success just sprinkle a little (manna gryan) before baking the cake.
Serve with whipped cream or vanilla sauce.

What is manna gryan, is that like tapioca for thickening?
I LOVE rhubarby stuff, not too sweet, but just sweet enough. My favorite is the rhubarb-strawberry pie in the summertime.

Oh I can't wait to try this next summer. I love rhubarb! I have to plant my own this summer. Last summer I raided MIL's garden, but still there was never enough rhubarb!

Did you know that rhubarb is one of the easiest things to grow and one of the hardest things to destroy?
My Swedish grandmother planted rhubarb when they moved to the farm in Idaho back about 1930. The plant is still there, and my 78 year old uncle, when he's running the mower around the house to cut down the weeds and stuff, will just mow right over the rhubarb, and back the new growth springs.
Before my father died in 1994, we had gone up to the farm and just dug into a corner of the plant there, took a hatchet and whacked off a portion of the roots, wrapped them in newspapers and took them back to Oregon, where we planted them in a corner of his vegetable garden, and sure enough, next year, rhubarb (or a pie plant, as they were known to old-timers).

manna gryan = cream of wheat porridge
I should have mentioned the reason I use manna gryan with other frozen berries … is I just poor the batter into the pan and press the barriers in after…. A little sprinkle of gryan will prevent the berries from getting burnt.
I second the Strawberry – Rhubarb combos. ;D
The one best thing I’ve inherited from my FIL & husband is the love of growing Strawberries … our patches were not great last summer, but have yeiled 30 litres of summers past. We all get toghether and make homemade saft.

I am sooooo hoping that we can find a patch of garden space this summer. The allotments around us pass from father to son apparently, but I'm told there are allotments available in the west part of town, out where all those immigrants are living.
