low fat vegetarian recipe Hey all! I want to share a new recipe I created. This is great for entertaining especially for the festive season
Its low cost, vegan and easy to make
one cup of green lentils soaked over night in water Three medium size potatoes one cup of chopped brocolli one tablespoon of chopped garlic A --salt, a pinch of dried basil, dash of black pepper
Boil water in a heavy pot. Throw in the lentils,garlic and potatoes -- cover and cook medium heat for 30mins. Add the brocoli and A ingredients and cook for another 15mins or until everything is soft to the touch. Drain excess water.
Use a handheld mixer. Blend until ingredients become mushy but still a little lumpy.
Now this is so versatile you can either:
1. Spoon the mixture into those small pastry cups you can get at the supermarket and top it off with some cheese or sour cream
2. Roll the mixture in batches in seasoned flour, cheese or bread crumbs and fry --- you have a healthy vegan burger
3. Spoon mixture onto a serving plate and place nacho chips around it --- you have a delicious and healthy dip
