Serves/Yields: Prep. Time: 2-3 hours for the whole process Cook Time: Category: Breads, Breakfast Difficulty: Moderate Ingredients 1 Tbsp (msk) yeast 2 tsp. (tsk) salt 2 Tbsp (msk) sugar 2 Tbsp (msk) oil 1 1/2 cups (3 1/2 dl) lukewarm water
3 cups (ca.7 dl) flour
cornmeal
Directions Mix the first five ingredients together and let stand about 5 minutes.
Put about half of the flour in to a bowl and add the above mixture and beat for 2-3 minutes. Stir in the rest of the flour.
Knead on a clean dry surface for about 8 minutes.
Cover and let rise in a warm place for about 1 hour.
Roll about to English muffin thickness (about the thickness of my thumb, which you can borrow if you want).
Cut out either with a round cutter (a glasss or cup works) for round ones or into squares or rectangles with a dull knife. (The rectangular ones are easier since there are no scraps to play with and reroll AND after all they do taste the same.
Put them on a plate or cookie sheet that has been lightly sprinkled with cornmeal. Cover with a damp tea towel and let rise for another hour.
Sprinkle corn meal over the top and fry in a dry pan over medium heat, about 10 minutes on one side and 5-10 mins on the other.
If you scorch the cornmeal, throw it away, replace it with fresh and lower the heat.
You may want to eat the first one to see if you need to adjust the cooking times.
I have this one:
English Muffin Loaves * 2 cups milk * 1/2 cup water * 5 - 6 cups flour * 1 package yeast * 1 tablespoon sugar * 2 teaspoons salt * 1/4 teaspoon baking soda * cornmeal Combine milk and water in small sauce pan. Heat over low heat until liquids are very warm. Place 4 cups flour, yeast, sugar salt, and baking soda in a blow and mix. Gradually add warm liquids to flour mixture and mix well. Add remaining flour, mix and knead. Dough will be very sticky. Spread dough into 2 loaf pans that have been greased and sprinkled with cornmeal. Cover and let rise for about 45 minutes. Bake at 400 degrees for 25 minutes. Remove from pans and cool.
