I just spread a little mayo on the chicken and then roll in bread crumbs with the spices I like.
Try the mayo..it really is good.

I also make my own with bread crumbs and whatever spices I feel like throwing in. I usually dip the chicken in milk first. I never thought of mayo though, it sounds good. Would Miracle Whip work? I don't have mayo, but I do have a small jar of miracle whip.

You can also dip the meat into some beaten egg, which gives a little crispier texture than milk. I haven't tried the mayo, but I can tell you that marinating some chicken in buttermilk for a few hours, then coating it and let it sit for about 15 minutes then quick fry, you get an incredibly crunchy crust and with the coating kind of dried, you don't absorb much fat that way.

Miracle Whip should work........I use no fat mayo....
and then bake...not fried------

One of my favorites for pork is to mix sage and thyme with the bread crumbs. This is good on chicken too.
I also like mixing cayenne pepper and garlic and onion powder with the crumbs for a little more kick.
But why not try a little variety? Curry powder for an exotic flavor?
Lemon pepper or grated lemon rind with fish?

Here you go! Shake and Bake 4 cups flour 4 cups dry bread crumbs or cracker crumbs 1/4 cup salt 2 tablespoons sugar 2 teaspoons each garlic powder and onion powder 3 tablespoons paprika 1 tablespoon poultry seasoning 1 teaspoon pepper 1/4 cup oil Measure everything into a big bowl one at a time. The last step is dribbling in the oil. Mix it all up with your hands or a fork. Makes about 9 cups of mix. Store it in a large coffee can, or a canister with a good lid. To cook chicken or pork chops: 1/2 cup home made shake and bake mix 2 pound of pork chops OR 3 pounds of cut up chicken (leg quarters are fine) Put your home made shake and bake into an empty bread bag. If the bag is very long, you can trim off a few inches from the top. Add the chicken or pork chops, one or two at a time, and shake the bag, to coat the meat. Arrange the coated meat on a large cookie sheet or baking pan. When it is all coated, bake the meat at 400 degrees for about 45 minutes. Boneless meat cooks in 30 minutes. Regular meat though usually takes 45 to 50 minutes.

Have you ever used corn flakes? You dip in egg then the cornflakes. I think I got that recipe from Pampered Chef. It's a favorite with kids and a little more nutritious, at least not as fattening.

Brandy, I think it would definitely work just as well to use cornflakes, instead of the breadcrumbs, and dip in egg beforehand, if you like. I have seen recipes that use that as well.
