I tested a chocolate cake recipe yesterday, and it turned out a little too "bouncy", not as soft as I'd like it to be... I'm making a birthday cake tomorrow and I want it to be softer. This is the recipe I used: 4 eggs 1/3 C vegetable oil 1/4 C water 2 1/2 C flour 1 1/3 C sugar 3/4 C cocoa powder 1 C sour cream 1 tsp vanilla 2 tsp baking powder Any suggestions on how to make this less rubbery ? Maybe fewer eggs ? Help !!! Thanks ! Helena

Hi Helena,
I'm sure Shelley will have a brilliant solution to your cake problem. All I can offer is a couple of recipes that I make all of the time and they turn out soft and fluffy.
All I could think when I read your recipe was that you really have to beat those ingredients very well (for up to 5 minutes or more) to give the cake a fine, buttery texture. It should look thick and creamy with a light chocolate colour after beating it. If you don't really mix it well, it can be somewhat dry and hard.
Chocolate Teacake
90g margarine ¾ cup sugar 1 cup flour 1 tsp baking powder ¼ cup cocoa 2 eggs ¼ cup milk (you may need a touch more) 1tsp vanillin socker
Preheat oven to 180C. Brush a 20cm round tin with melted butter and line base with baking paper.
Place margarine, sugar, flour, baking powder, cocoa, eggs, vanilla, milk in a small bowl of an electric mixer. Beat for 2 minutes on low speed, increase to high and beat for another 3 minutes or until mixture is well combined and creamy.
Spoon into prepared baking tin, smooth the surface and bake for 35 minutes.
3-minute Chocolate Cake
1 cup sugar ¼ cup melted butter 2 cups sifted flour 1 ½ tsp baking powder 1 ½ tbsp cocoa 2 eggs ¾ cup milk
Place all ingredients in a mixing bowl and beat for three minutes. If mixture seems a little thick, add a bit more milk while beating. Pour mixture into greased 20cm cake tin and bake at 180C for 40 minutes. This is also suitable for cup cakes.

Thanks !! I might try that first one you posted. I want a very chocolatey cake, but it needs to be very soft. There's gonna be cream cheese frosting, blackberry jam and chocolate frosting involved also Yuuummmm
